He's created a distinction of hot, spicy Creole and Cajun cuisine using traditional ingredients like spicy crawfish, alligator, red rice, beans, bourbon, chilis and savory sauces, but takes each recipe up a flavor notch or two. This wonderful collection showcases some of his favorite personalized recipes - but warning: when he says "fiery", he means "FIERY!"
