Molded Gingerbread Cookies
6 tbsp unsalted butter, room temperature
2/3 cup light brown sugar
1 large egg
½ cup molasses
1 tsp vanilla extract
3 cups flour
1 tbsp ground ginger
1 tbsp ground cinnamon
¼ tsp ground cloves
½ tsp ground nutmeg
¼ tsp salt
Prepare the Dough:
In a large bowl, cream together the softened butter and light brown sugar until light and fluffy. Beat in the egg, then stir in the molasses and vanilla extract.
Add Dry Ingredients:
In a separate bowl, whisk together the flour, ground ginger, ground cinnamon, ground cloves, ground nutmeg, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until a cohesive dough forms.
Chill the Dough:
Divide the dough into manageable portions, flatten slightly, wrap in plastic wrap, and chill for at least 30 minutes (or longer for easier handling with molds).
Prepare and Mold Cookies:
Lightly dust your cookie mold with flour or confectioner's sugar. Press a portion of the chilled dough firmly into the mold, ensuring it fills all the details. Carefully remove the molded cookie and place it on a baking sheet lined with parchment paper.
Bake at 375F for 10-14 minutes depending on the size of the cookie and the thickness.
