This takes a good hour, but it’s so worth it when you have the time. Let the veg Carmelo e for a good long time. Also, let the egg mixture rest with salt in it for a good 5 minutes. Cool on super low heat and finish under the broiler. Good with any veg and cheese. Add just a little nutmeg! Yum!
