Rejected at first by non-Chinese, their restaurants became very popular and soon opened even in places where few, if any, of the customers were Chinese. Their struggles enabled their children to gain higher education and careers beyond the restaurants. These family businesses serving Cantonese cuisine and western dishes had a vital role in Chinese American history but are now disappearing, either closed, run by Chinese from other regions with different cuisines, or replaced by franchises and chains.
