What is going on with the lines that look like stitches in the footbed? I don’t see those on other versions of this shoe.

Yes, there is stitching in the construction of the leather. There is a stitching over the arch and one in the heel cup. It looks like this is where the leather was molded over the curvature of the cork footbed. I've added a photo of the origional box as shipped from Birkenstock.
